NO ROLL SUGAR COOKIES

Baking Info

Ingredients

Cookie

  • 1/3 cup shortening
  • 1/3 cup butter
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/4 tsp almond extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups flour plus 2 tbsp

Frosting

  • 1/2 cup butter softened
  • 1 tsp vanilla
  • 2 tbsp milk
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350. and line cookie sheet with parchment paper.
  2. In a bowl/stand mixer beat cream shortening, butter and sugar until fluffy. Add egg and extracts and mix well.
  3. Combine baking powder, salt and flour in a separate bowl. Gradually add to the wet mixture until blended.
  4. Using a cooking scoop, lightly roll the dough into a ball in your hands, place it on a parchment paper-lined baking sheet and press the top of the cookies halfway down.
  5. Bake for 10-12 minutes.
  6. For the frosting, beat butter until fluffy using a hand mixer. Add vanilla and milk. Blend lightly. Add powdered sugar one cup at a time. The texture should be solid but soft. Frost cookies.



RED VELVET WHITE CHOCOLATE CHIP COOKIES

Ingredients


  • 1/2 cup butter softened
  • 3/4 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp red food colouring
  • 1 1/4 cup flour
  • 1/4 cup cocoa powder
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cups white chocolate chips

Instructions

  1. In a large bowl, beat together the butter and sugar, until light and fluffy. Add the egg, vanilla, and food colouring, and mix until smooth.
  2. In another bowl, whisk together the flour, cocoa powder, salt, baking powder, and baking soda. Add the dry ingredients to the wet ingredients, and mix until just combined. Fold in the white chocolate chips.
  3. Refrigerate the dough for 30 minutes. During the last ten minutes of chilling time, preheat the oven to 350 and line two baking sheets with parchment/cooking spray.
  4. Roll the dough into one inch balls, and top each ball with a few extra chocolate chips.
  5. Bake for 9 minutes, then remove from oven. The cookies will be puffy and fat, then flatten slightly as they cool. Let the cookies cool on the baking sheet for 10 minutes before removing to a cooling rack.



PEPPERMINT OREO SUGAR COOKIES

Ingredients

  • 1 package Betty Crocker Sugar Cookie Mix (or any Sugar Cookie Recipe)
  • Eggs, oil, and water as calls for on the package
  • 1 cup candy cane Oreos crushed
  • 1/2 cup Peppermint baking chips

Instructions

  1. Preheat the oven to 375 degrees.
  2. Prepare sugar cookie dough according to package instructions.
  3. Stir in chopped Oreos and peppermint baking chips.
  4. Drop dough by rounded tablespoons onto a parchment paper-covered baking sheet.
  5. Bake at 375 for about 10-12 minutes, or until edges are just starting to brown.
  6. Cool on the baking sheet for about 2 minutes before transferring to a cooling rack.
